Chef Carlo "Ojisan" Mele is a master and historian of ramen, the famous and most important dish of Japanese cuisine.
His culinary studies and passion for the culture of the Rising Sun led him to explore why food plays such an important role in Japanese storytelling, with a particular interest in manga and anime.
In recent years he has explored the gastronomic universe of Studio Ghibli, creating occasions where food tasted and food told meet and giving life to gastronomic and cultural events with great public success.
